spiced pickled plums MAKES 1.5L (6 cups) | PREP 20 mins (+ 3 days pickling) | COOKING 20 mins 500ml (2 cups) distilled malt vinegar500g (2 1 /3 cup) caster sugar2 cinnamon sticks3 whole star anise1 tbs pink peppercorns1 tsp salt1kg plums, halved, pitted3 fresh rosemary sprigs3 fresh thyme sprigs3 fresh bay leaves, bruised 1 Place the vinegar and sugar in a large saucepan over medium-low heat. Cook, stirring, until sugar dissolves. 2 Add the cinnamon, star anise, peppercorns and salt. Bring to the boil. Add the plum and immediately remove from the heat.
