Helen Skelton takes centre stage this month with her welcome call to us all to make our lives a bit wilder and more adventurous. And it’s not just to sate our wanderlust, tick off new experiences and fill Instagram feeds. Walking, cycling, canoeing, climbing and running in the countryside make us feel good – both in body and mind (and I say this through personal experience). I predict that fresh air, exercise and spending time in wild places among nature will be a key element of future healthcare in the UK – GPs will prescribe time away from tablets of all kinds and instead encourage us all to take three doses of countryside each week. must-see MELLOW BOWLAND A gentle, sunbathed autumn day in the uplands is a blessing for walkers – gin-clear views and a rich colour pallette await, with cooling breezes to make conditions perfect for a good stomp. Here, the ghost of summer sun lights up the valley of the Marshaw Wyre, a stream that rises below Hawthornthwaite Fell in the Forest of Bowland. This little-known spur of the Pennines thrusts west into northern Lancashire and is characterised by stark hills and grouse moors threaded by pretty valleys. make autumn leaf jars

You will need: Several fresh, fallen leaves (make sure they’re not too dry, as they will crumble or snap) • A medium-sized Mason jar (a cleaned jam or sauce jar will work well) • A medium sponge brush • Mod Podge Gloss or Matte (glue and sealer in one) 1 Make sure your leaves are clear of insects, then press under a heavy book overnight to flatten. Clean your jar and allow to dry completely. Using the brush, coat your jar in a layer of Mod Podge, leaving the base and screw-top clear. 2 Begin placing your leaves on the jar, overlapping them slightly; use a spot of Mod Podge to stick edges down. Get creative with how much of the jar you cover and how far apart you space your leaves.…

the month to cook... roast wild rabbit

ROAST RABBIT WITH APPLE Serves 4 › 3–4 tbsp Calvados or whisky› 1–2 tbsp cider vinegar› Leaves from a few fresh thyme sprigs› 4–5 juniper berries, crushed› 1 rabbit› 1–2 aromatic dessert apples› Bacon fat, butter or olive oil for barding, optional› 150ml double cream› Salt and pepper Method 1 Mix the Calvados or whisky, cider vinegar, thyme and juniper berries in a deep glass or china bowl. Put the rabbit into this mixture and leave to marinate for 2–3 hours. 2 Preheat the oven to 150°C, 300°F, gas mark 2. 3 When ready to cook, peel and core the apples and cut them into small chunks.
