There was a time when I dedicated every Sunday to making bolognese. It was a vehicle for vegies for the fussy child – I grated onion, celery and carrot, and cooked them down to nothing; it literally took an hour, stirring all the while. Then there was the addition of a fancypants mixture of meats, and a whole jar of tomato paste. That was cooked off for an interminable amount of time, before finally adding cans of tomatoes that had been blitzed with a stick blender and strained. Then it simmered for the rest of the day. The Best Bolognese LasagneAVERAGE USER RATING: SERVES 6PREP 20 MINSCOOK 35 MINS1 tablespoon olive oil500g beef mince¼ cup Leggo’s Pizza Sauce500g jar Leggo’s Bolognese Pasta Sauce1 cup water400g fresh ricotta cheese2 tablespoons chopped fresh parsley1 egg, lightly beaten2½ cups grated mozzarella cheese½ cup grated parmesan cheese250g fresh lasagne sheets1 Heat oil in a large saucepan over high heat. Add mince and cook for 5 minutes or until browned.2 Reduce heat to medium and add Leggo’s Pizza Sauce, Leggo’s Bolognese Pasta Sauce and water. Cook sauce uncovered for 5 minutes, stirring occasionally.
