Rachael Ray’s Orange, Oregano and Red Onion Salad Briny, salty capers balance the sweetness of the juicy oranges in this Sicilian classic! • 6 navel oranges or blood oranges, or a mixture of both• 1 small red onion, very thinly sliced• Leaves from 2 sprigs fresh oregano, finely chopped• EVOO, for drizzling• A fat handful of flat-leaf parsley tops, coarsely chopped• 3 Tbs. capers, preferably capote• Salt and pepper • Trim tops and bottoms of oranges. Stand them upright and use sharp knife to cut away peel and membranes, following curve of fruit. Cut oranges crosswise into disks. Shingle oranges and onion slices on large platter.
