david venable’s mardi gras cups

• 8 oz. fresh chorizo sausage, casing removed• 1 can (14.5 oz.) petite diced tomatoes, drained• 1 pkg. (8.5 oz.) precooked seasoned red beans and rice, such as Uncle Ben’s• 1 tsp. salt• 1/2 tsp. pepper• 30 pre-made mini filo cups• 1 1/2 cups extra-sharp Cheddar cheese, 6 oz. • Preheat oven to 350°F. In large skillet over medium heat, crumble chorizo and cook, stirring, until cooked through and no longer pink; drain. Return sausage to skillet; add tomatoes, red beans and rice, salt and pepper. Cook filling until heated through, about 5 minutes. Place filo cups on baking sheet. Fill each cup with about 1 1/2-2 tsp. filling. Top each cup with cheese. Let the good times roll with Mardi Gras treats! In New Orleans, millions of people will enjoy the classic glazed cinnamon Mardi Gras treat: King Cake! And you can, too—just try one of these super-simple twists at home: • King Cake Monkey Bread! Preheat oven to 350°F. Open 4 tubes refrigerated homestyle biscuits. Cut each biscuit into 4 pieces, roll in mixture of 3/4 cup sugar, 1/2 cup finely chopped pecans and 2 tsp. cinnamon; place in Bundt pan. In a pan, heat 1 cup sugar, 1/4 cup each packed brown sugar and evaporated milk and 3/4 cup butter until melted; pour over biscuits. Bake 40-45 minutes. Let cool.
