Celebrate Easter with ca rrot cake treats! Turn one of the season’s classic treats—carrot cake—into something extra-special with one of these easy twists. Here’s how: • Carrot Cake in a Mug: In bowl, mix 1/4 cup all-purpose flour, 2 Tbs. brown sugar, 1 Tbs. granulated sugar, 1/2 tsp. baking powder, 1/4 tsp. ground cinnamon, pinch each salt and nutmeg. Whisk in 1 egg, 2 Tbs. milk, 1 Tbs. vegetable oil, 1 Tbs. water, 2 Tbs. shredded carrots. Pour into 16 oz. mug; microwave about 2 minutes. Let cool. • Carrot Cake Cookies: Mix 1 (15 oz.) box carrot cake mix, 2/3 cup flour, 2 eggs, 1/3 cup vegetable oil and 1/4 cup plain yogurt.
