• 1 cup all-purpose flour• 1/4 cup sugar• 5 eggs• 1/4 cup butter, melted• 1/2 tsp. freshly grated lemon zest• 2 cups milk• Fruit and confectioners’ sugar, for serving • Lightly grease crepe pan or shallow sauté pan with oil or butter. In medium bowl, whisk together flour, sugar, eggs, butter and zest. Slowly add milk while continuing to whisk. Batter should have the consistency of cream. Heat greased pan over medium heat for about 1 minute. Using 1/3-cup measure, pour mixture into pan. Cook 2 minutes or until crepe is light brown on underside (check using spatula to gently lift up one edge of crepe), then flip to cook other side 30 seconds more. Repeat with remaining batter.
