Easy Cheesy Bacon Chicken This speedy supper of golden sautéed chicken covered in melty cheese sauce with a sprinkle of bacon couldn’t be easier—or tastier! • 4 slices bacon, chopped• 4 boneless, skinless chicken breast halves• Salt and pepper• 1/2 tsp. paprika• 4 oz. easy-melting cheese (like Velveeta), cubed• 1/4 cup chicken broth• 2 Tbs. chopped fresh parsley, optional • In large nonstick skillet, cook bacon over medium heat until crisp, about 4 minutes. “Roller-skating puts a smile on my face!” Nothing can compare to the happiness I feel when I lace up my roller skates. At 56, I’m usually the youngest one in my skating group. A couple dozen of us like to get together every week and circle the old rink near my home. Most of the skaters are in their 70s, and one will be 90 next year. What an inspiration!
