CITRUS ROAST TURKEY WITH LEEKS & CRANBERRIES MAKES 8 TO 10 SERVINGSHANDS-ON TIME 25 MINUTESTOTAL TIME 3½ HOURS 6 tbsp salted butter, softened½ cup chopped fresh herbs (such as parsley, thyme and sage)2 tbsp orange zest1 tbsp paprika salt and pepper 1 whole turkey (about 5.4 kg)4 cups chicken broth1 cup orange juice2 leeks (white and light green parts only), sliced into rounds2 cups fresh cranberries fresh sprigs of sage Preheat oven to 450°F.
