FENNEL, APRICOT & HALLOUMI SALAD MAKES 4 TO 6 SERVINGS HANDS-ON TIME 20 MINUTES TOTAL TIME 35 MINUTES 2 tsp olive oil2 pita breads2 tsp za’atar spice blendpinch each salt and pepper Salad1 red grapefruit½ red onion, thinly sliced salt and pepper1 head fennel, cut into ¼-inch thick wedges and fronds removed4 fresh apricots, halved and pitted¼ cup olive oil, divided1 250 g block halloumi cheese, cut into ¼-inch thick slices2 cups mâche (lamb’s lettuce)½ cup pomegranate seeds2 tbsp torn fresh mint2 tbsp torn fresh parsley2 tsp red wine vinegar2 tsp za’atar spice blend1 tsp sumac Preheat oven to 350°F.
