i’ve got news!

Nourish from Within I’ve never struggled to write my editor’s letters as much as I have in 2020. What some of you may not know is that we produce these issues months before their happy drop in your mailbox. I’ve found myself in this same head-scratching position many times this year, asking the universal question, “Where will we be in two months’ time?” But I’ll admit, this time feels different, because this time, in November 2020, I’m wondering what the new year will bring. We’ve all been ready to fast-forward to 2021 (and never look back) since March 2020. I’ve come to think of 2021 as “the year we’ll take it all back.” I know, that sounds a little dramatic, but things have been dramatic – it’s probably the most dramatic…

what is clean eating?

The soul of clean eating is consuming food the way nature delivered it, or as close to it as possible. It is not a diet; it’s a lifestyle approach to food and its preparation. It’s about eating real food, for a healthy, happy life. Eat when hungry, stop when full. Find out what macro values reflect your health goals and strive to eat within them. Experiment with various ways of eating, and when you find a diet your body responds well to — be it a clean take on high fat/low carb, Paleo or flexitarian — stick with it. Choose organic whenever possible. If your budget limits you, make meat, eggs, dairy and the Dirty Dozen ( your organic priorities. Drink at least 2 liters of water a day, preferably from a reusable…

Q/ Superfoods have been trending for some time. Which ones do you think we’ll see more of this year? A/ Superfoods aren’t rare – there are loads of well-known superfoods, like spinach, sweet potatoes, walnuts and broccoli. I think we’ll be seeing matcha getting some extra attention this year. With more working from home, needing a caffeine boost but with a balancing, calming effect, I expect we’ll see more of this traditional Japanese drink. Also, chickpeas: With more people going plant-based, legumes have become increasingly popular. Chickpeas are the most versatile bean in my pantry. I use them in soups, tacos and salads, as a main ingredient in falafels and veggie burgers and as a grain substitute in tabbouleh. Thirdly, spice blends! Many spices have anti-inflammatory and even antiviral and antibacterial properties. With people…

vitamin d deficiency & covid-19

Nearly half of North America is deficient in vitamin D, a crucial vitamin that affects everything from mood disorders to immunity. Now, a recent study published by the Endocrine Society shows that Europe suffers from the same deficiency. The study looked at 200 COVID-19 patients in Spain and found 80% to be vitamin D deficient. These D-deficient patients had higher levels of inflammatory markers including D-dimer and ferritin. Vitamin D is produced by the kidneys to balance blood calcium concentrations and has a serious impact on the function of the immune system. A deficiency in this essential vitamin has been linked to reduced protection against infections. José L. Hernández, PhD, a co-author of this study, believes vitamin D treatment should be part of the treatment in COVID-19 patients who are deficient. “This…
