I’ll admit, when air fryers first started trending several years ago, I was skeptical. Did I really need another device in my kitchen? (After all, I was still trying to get more out of my Instant Pot!) But in the years since air fryers emerged, they have proved their staying power as versatile appliances worthy of counter space in our kitchens. The recipes in this issue demonstrate just how versatile the air fryer can be. You’ll find plenty of recipes that mimic deep-frying and pan-frying, like the Pork Dumplings on p. 51, Egg Rolls on p. 17, Pretzel-Crusted Crab Cakes on p. 14, and, of course, Air-Fryer Fries on p. 22.
