150g emmer wheat or other grain
80g Brazil nuts (or other nuts)
2 tbs maple syrup or other sweetener
200g broad beans (podded weight – about 500g pods)
8 apricots, halved, stoned and then torn into large pieces
6g hijiki seaweed (or other seaweed), soaked for 10 minutes in cold water and then drained
50g bean sprouts, optional
4 mint sprigs, leaves picked, stalks finely chopped
4 parsley sprigs, leaves roughly chopped, stalks finely chopped
2 tbs extra virgin olive oil
unwaxed, lemon zest and juice
marigold petals or other edible flowers, to serve, optional
