Japanese restaurants are popping up at every turn, spearheaded by Jason Atherton’s Sosharu. The cuisine’s accompanying drink, sake, can present a great dilemma to the inexperienced. A welcome helping hand comes in Elliot Faber and Hayato Hishinuma’s new book, which escorts you across Japan, documenting how sake is prepared and profiling its brewers. “What is exciting is that sake has great versatility,” Faber says, “and can be paired with everything from Japanese to BBQ and Italian.” If already a connoisseur, try unpasteurised (nama) sakes. “Nama sake can be extremely flavourful,” Faber says. “It’s like drinking in 3D!” He recommends six of his favourites, above.
