This year Naples Illustrated launched a new custom magazine, Dine239. A celebration of dining, the guide has been embraced by visitors and residents. With distribution at hotels and resorts around the area, our seasonal guests get a vivid look at the bourgeoning restaurant scene on the Paradise Coast—which is still a fitting nickname for the area, even if El Niño has delivered an extra large dose of precipitation this year. It’s much better being here than watching snowdrifts pile up. Our annual visitors have been packing the boutiques from uptown to downtown, along with the golf courses and restaurants all over the area during their well-deserved vacation time. It’s no surprise that Naples is a small town with an enormous heart. Philanthropists in our community personify the popular saying “to give is to receive.” Take Jay and Patty Baker. There is no mistaking the joie de vivre on their faces when making a charitable donation, whether it’s raising a paddle at an auction or gifting millions of dollars in one fell swoop— and then turning around to give again and again. The Bakers have been planting the seeds of philanthropy in Naples for more than 20 years and watching the community transform with their financial nourishment. recipe SALADE NIÇOISE With Easter approaching, there is an abundance of hard-boiled eggs in the house. Turn those festively decorated eggs into something light and fabulous. Ingredients (serves 4) ½pound French string beans, blanched ½pound new potatoes, boiled 3 hard-boiled eggs, peeled and quartered 10 anchovies, packed in oil (optional) 1 pound fresh tuna, grilled ½cup Niçoise olives, pitted 3 medium tomatoes, quartered Rub a tablespoon of olive oil on the tuna and grill it until opaque. Remove from heat. When cool to the touch, drizzle with vinaigrette until coated. Set aside at room temperature. Toss blanched French beans in 2/3 of the vinaigrette until coated and place in the center of a large serving platter. Top with anchovies, quartered eggs, and tomatoes. Drizzle with 1 to 2 tablespoons of vinaigrette. On a second platter, arrange the potatoes. Break apart tuna and…
