INGREDIENTS MAKES 16 SERVINGS 1 ½ cups unsalted butter, softened2 ¼ cups granulated sugar½ cup liquid egg whites1 tsp pure vanilla extract3 cups all-purpose flour2¼ tsp baking powder½ tsp each: baking soda and salt1 ½ cups buttermilk Assembly Coconut Meringue Icing (see recipe, right)½ cup sweetened shredded coconutEdible Birch Bark (see recipe, page 16)Sugared Rosemary (see recipe, page 16) DIRECTIONS Preheat the oven to 350°F. Grease and flour three 8-inch round cake pans; line the bottoms with parchment paper. Set aside. In a stand mixer fitted with the paddle attachment, beat the butter with the sugar until fluffy. WINTER SIDECAR MAKES 1 COCKTAIL Adding a rosemary honey syrup to this classic cocktail creates a cool-weather variation. Traditionally made with cognac, a grape-based brandy produced only in France, this version features brandy ROSEMARY HONEY SYRUP (MAKES ABOUT ½ CUP, ENOUGH FOR 16 DRINKS.) ¼ cup water¼ cup pure liquid honey1 sprig fresh rosemary COCKTAIL 1½ oz brandy¾ oz Cointreau or orange liqueur of choice¾ oz freshly squeezed lemon juice¼ oz rosemary honey syrupHandful of ice cubes Combine the water, honey and rosemary in a small pot and bring to a simmer, stirring until the honey has dissolved.
