I’ve always loved the changing of the seasons and the simple, familiar pleasures that come along with it. After enjoying a sun-drenched summer, relaxing poolside and tending to the vegetable garden, I relish in strolling through the leaf-strewn forest, surrounded by fiery foliage, and delighted by that oh-so-singular smell of autumn. Before long, winter will settle in, bringing with it all the splendour of the holiday season, and the perfect excuse to settle by the fire, toasty drink in hand, snuggled up in a cozy blanket. classic pumpkin pie

INGREDIENTS MAKES 8 TO 10 SERVINGS PASTRY 1⅓ cups all-purpose flour1 tbsp granulated sugar½ tsp salt¼ cup cold lard, cubed⅓ cup cold unsalted butter, cubed3 tbsp ice water (approx) FILLING 1½ cups pumpkin purée3 eggs1 cup 35% cream⅔ cup granulated sugar2 tbsp maple syrup1 tsp pumpkin pie spice½ tsp cinnamon¼ tsp each ground ginger, nutmegand salt TOPPING (OPTIONAL) 24 Gingersnap Leaf Cookies DIRECTIONS PASTRY In food processor, pulse together flour, sugar and salt until combined; pulse in lard, a few cubes at a time, until mixture resembles fine crumbs. Pulse in butter, a few cubes at a time, until mixture is in coarse crumbs about the size of large peas, 6 to 8 pulses. Drizzle in ice water; pulse to form ragged dough.
