Place 1 coconut in a nest of aluminum foil (to keep it from rolling) on a rimmed baking sheet. Find the 2 eyes that are identical and the line that runs between them. Position a cleaver or other large sharp knife perpendicular to that line in the middle of the coconut. Using a rubber mallet, tap the cleaver through the coconut, splitting it in half. Place halves over a bowl, and reserve coconut liquid from each. Pour coconut liquid through a wire-mesh strainer into another bowl, reserving enough coconut water to equal 1/4 cup.
