Combine 1/4 cup (2 oz.) bourbon, 2 Tbsp. apple cider, and 2 Tbsp. ginger syrup in a cocktail shaker filled with ice. Cover with lid, and shake vigorously for 30 seconds. Strain into 2 chilled coupe glasses. Top each drink with 1/4 cup apple kombucha, and garnish each with 1 apple slice, if desired. Serve immediately. Serves 2.
