1 Cauliflower-Feta Soup START TO FINISH: 40 MIN 2 tbsp. olive oil, plus more for drizzling • 1 large head cauliflower (about 2 lb.), cut into florets • 2 cloves garlic • 4 cups vegetable stock • 6 oz. feta, crumbled (1½ cups) • ½ cup pomegranate seeds • ¼ cup fresh mint leaves, chopped In large pot, heat 2 tbsp. oil over medium. Add cauliflower and garlic. Cook, stirring often, for 5 minutes; season. Add stock. Cover; reduce heat to medium-low. Simmer for 20 minutes. Add 1¼ cups feta to soup. Using blender, puree soup. Top with pomegranate seeds, mint, remaining ¼ cup feta, and drizzle of oil. POM-CARDAMOM THE MIXER In a small saucepan, bring ¼ cup water and 1½ tsp. cardamom seeds (from about 25 pods) just to a simmer over medium-high heat. Off heat, add ¼ cup sugar and stir until dissolved. Let cool for 10 minutes. Strain the cardamom syrup into a bowl. In a large jar, bottle, or pitcher, stir 5 tbsp. cardamom syrup, 1¼ cups unsweetened pomegranate juice, and 5 tsp. bourbon. Cover and refrigerate until cold, about 2 hours or up to 1 week. Up to 2 hours before serving, mix in 5 tsp. fresh lemon juice and keep refrigerated. Stir well before using. THE COCKTAIL In a Champagne flute, add 3 tbsp. of the mixer.
