Pork Katsu Sandwiches MAKES 4 ACTIVE: 20 MIN TOTAL: 1 HOUR 1 red onion, very thinly sliced½ cup hot water¼ cup apple cider vinegar¼ cup white vinegar1½ tbsp. sugar1½ tsp. kosher saltVegetable oil, for frying4 boneless center-cut pork chops (5 oz. each; about ¾ inch thick)1 cup flour2 large eggs1½ cups panko½ cup katsu sauce (such as Bull-Dog brand)8 slices soft country white bread, crusts removed2 cups shredded green cabbage 1. Place the onion in a heatproof container. In a 2-cup liquid measuring cup, stir the water, both vinegars, the sugar, and kosher salt until the sugar and salt dissolve. Pour over the onion.
