Although it is only five years since the last Summer Olympics, it seems much longer because of Covid, which means for the Weekly staff, the excitement has only grown stronger! It has been a long road for our stellar athletes, and I’m sure they’ve had many ups and downs along the way. Chocolate-chip cookies PREP + COOK TIME 30 MINS (+ cooling) MAKES 44 250g butter, softened1 teaspoon vanilla extract¾ cup (165g) caster sugar¾ cup (165g) brown sugar, firmly packed1 egg2¼ cups (335g) plain flour1 teaspoon baking soda375g dark chocolate melts, coarsely chopped 1 Preheat oven to 180°C. Grease three oven trays; line with baking paper. 2 Beat butter, vanilla, both sugars and egg in a small bowl with an electric mixer until pale and fluffy. Transfer mixture to a large bowl and stir in sifted flour and soda, in two batches, until mixture is smooth. Stir in chocolate. 3 Roll tablespoons of mixture into balls and place 5cm apart on trays. 4 For a chewier cookie, bake for 12 minutes or 14 minutes for golden and crisp. Cool on trays.
