As I write this, hopeful about the summer ahead, it’s the greyest, windiest and most miserable day! I have high hopes that we’ll have at least some sunny days, because we’ve packed this issue with loads of recipes that are perfect for alfresco dining. co-op’s new summer range includes cauliflower wings and burger bites

Co-op (coop.co.uk) has revealed a number of new vegan items being launched into its GRO range this summer. The items include Buffalo Cauliflower Wings – polenta-coated cauliflower florets, served with a Dijon mustard, lemon and chives dip; and Tomato & Basil Cocktail Sausages – made from plant-protein and seasoned with black pepper. Also in the range are Incredible Burger Bites with M’C Sauce, and Salted Caramel Swirl Vegan Ice Cream. The announcement of the new products comes shortly after the news that Co-op is slashing prices on its plant-based range to match meat-based equivalents. 29 fresh, chilled and ambient products have been reduced in price, as Co-op unveiled a 10-point climate change action plan to achieve net zero for its direct and indirect carbon emissions by 2040. The reason for this is that harvesting saffron is labour-intensive, and its yield is low. alexis gauthier has opened a vegan restaurant at fenwick, bond street

Michelin Star chef Alexis Gauthier has opened a new plant-based restaurant at Fenwick department store in Bond Street, London. According to the website, 123V (123vegan.co.uk) is for everyone: “Alexis Gauthier’s menu brings together influences from all over the world, including Southern California, Mexico, Thailand and the South of France. Whether it’s a Champagne Breakfast on Bond Street, a three course family lunch or aperitivo drinks and snacks and sunset, the aim is simple: to open your eyes to how delicious plant-based food can be.” The restaurant is open now, in line with guidelines, for both indoor and outdoor dining.
