COCONUT SUGAR Coconut sugar (coconut palm sugar) is not made from coconuts, but from the sap of the blossoms of the coconut palm tree. The sap is collected and then boiled to evaporate the water content, leaving a sugar that looks a little like raw or light brown sugar with a similar caramel flavor. It has the same amount of calories as regular white sugar, but on the plus side, it does contain some trace minerals.
