
No.1 Mustard & mint potatoes
PREP + COOK TIME 30 MINUTES SERVES 6
Preheat a 7-litre air fryer to 200˚C for 3 minutes. Cut 1kg baby red-skinned potatoes in half lengthways. Place in a large bowl with 2 tablespoons olive oil, then season; mix well to coat. Taking care, place potatoes in the air fryer basket, cook for 20 minutes, turning halfway through cooking time, until golden and tender. Meanwhile, combine 1 teaspoon each Dijon and whole grain mustards, 2 tablespoons finely chopped mint, 1 tablespoon extra virgin olive oil and 3 teaspoons white wine vinegar in a large bowl; add potatoes and toss to coat. Serve scattered with mint leaves.
No.2 Greek-style potatoes
PREP + COOK TIME 30 MINUTES SERVES 6
Preheat a 7-litre air fryer to 200˚C for 3 minutes. Cut 1kg baby red-skinned potatoes into quarters lengthways. Place in a large bowl with 2 tablespoons olive oil, 2 teaspoons dried oregano, 2 tablespoons finely chopped rosemary and 4 crushed cloves garlic, then season; mix well to coat. Taking care, place potatoes in the air fryer basket, cook for 20 minutes, turning halfway through cooking time, until golden and tender. Serve drizzled with 2 tablespoons lemon juice.
No.3 Fetta, dill & bacon potatoes
PREP + COOK TIME 30 MINUTES SERVES 6
Preheat a 7-litre air fryer to 200˚C for 3 minutes. Cut 1kg baby red-skinned potatoes into quarters. Place in a large bowl with 2 tablespoons extra virgin olive oil, then season; mix well to coat. Taking care, place potatoes in the air fryer basket, cook for 20 minutes, turning halfway through cooking time, until golden and tender. Add 150g chopped rindless middle-cut bacon rashers to air fryer basket for the last 7 minutes of cooking time. Meanwhile, combine 30g crumbled fetta, 1tablespoon chopped dill, 2 tablespoons whole-egg mayonnaise and ¼ cup sour cream in a large bowl; add potatoes and toss to coat. Top with crispy bacon and extra dill sprigs.
No.4 Peri Peri potatoes
PREP + COOK TIME 30 MINUTES SERVES 6
Preheat a 7-litre air fryer to 200˚C for 3 minutes. Cut 1kg baby red-skinned potatoes in half widthways. Place in a large bowl with 2 tablespoons extra virgin olive oil, 25g sachet medium Peri Peri seasoning and 3 crushed cloves garlic, then season; mix well to coat. Taking care, place potatoes in the air fryer basket, cook for 20 minutes, turning halfway through cooking time, until golden and tender. Drizzle with Peri Peri sauce for extra heat, if you like. ■
