SUMMER ON OAHU, Hawaii, means one thing to Michelle Karr-Ueoka: shave ice. The pastry chef behind MW Restaurant in Honolulu still remembers the first one she ordered when she was 6. It was a simple strawberry shave ice, a fluffy mound of ice drizzled with a neon-hued fruit syrup from Matsumoto Shave Ice, a famous stand on the North Shore, and it triggered a lifelong obsession. Now, Karr-Ueoka has expanded from serving shave ice at MW Restaurant to collaborating with chef Michael Mina on an upcoming concept in his food hall, The Street.
