Molote
A molote is a filled, corn-based pastry usually served as an appetiser or snack in Mexican cuisine. It consists of a dough made from cornflour, sometimes blended with mashed potatoes, that is filled with various ingredients such as chicken, potatoes and mushrooms, and then fried in oil. In some areas molotes are rolled into cigar shapes or ovals, in others they are formed into half-moons similar to empanadas. Of course, the ingredients you put in a molote are up to you — ham and pineapple molotes are just one newer version.
