COCONUT BASIL SEED PUDDING 1 Blend together 2 cups of coconut milk, tsp vanilla extract and cup maple syrup (or your sweetener of choice). 2 Mix in cup basil seeds until well-dispersed through the mixture. 3 Pour the mixture into a glass jar or bowl and refrigerate for at least 4 hours, or ideally overnight, until the basil seeds have expanded and the mixture has thickened up. 4 Serve cold, topped with fresh seasonal fruit of your choice.
