welcome

Whenever we send out a membership survey to ask how you're enjoying the magazine, one thing we always hear back is that you'd like even more simple, everyday vegan recipes that don't contain weird ingredients, or take hours to prepare. You spoke and we listened. So this issue we kick things off with a bumper section packed with easy recipes that take less than an hour to cook, contain no more than 10 main ingredients, and you can buy everything you need from a supermarket. And when you think about super easy but delicious vegan cooking, which contains just a handful of ingredients,…

OATLY ANNOUNCES PLANS FOR FIRST UK FACTORY We know you love Oatly as much as we do and no doubt share our frustration when its popularity means that supply levels are often low. But there’s good news: the Swedish oat drink company has announced that it’s finally going to open a UK factory, which will have the capacity to produce 450 million litres of oat drink a year, making it one of the world’s largest plant-based dairy factories. The factory is set to open its doors early in 2023 and will be located in Peterborough, creating at least 200 new jobs in the area. The UK factory is part of the wider initiative from Oatly to build factories fit for the future, with efficient use of resources and minimal negative impact on…

eating out with this vegan city

MAKE NO BONES Location: 10 Hicks St, Neepsend, Sheffield S3 8BL Website: makenobones.co.uk Cuisine: Vegan comfort food Service: Eat in and takeaway We’re in Sheffield. Well, we’re not actually, because, well… lockdown. However, we did send a takeaway to Sheffield-based friends to do a taste test of vegan eatery Make No Bones. We also spoke to owner Dave, who gave us the low-down on how he and his partner Lauren started up. Having both been vegan for more than 10 years, the couple found their food options limited while jobbing at pubs and bars around the city. Fed up with only being able to order chips on the job, they decided to take things into their own hands. First, persuading the chef to do a vegan night in the pub they worked at, which turned out…

cook up one heck of a meal

Since HECK burst onto the vegan scene back in 2015 with its delicious plant-based sausages, the Yorkshire food firm’s range has continued to grow in size and popularity, and now they’ve added two new lines that are giving cooks a head-start in the kitchen this summer – Vegan Mince and Vegan Italia Burgers. On sale from April, the tasty pea-based mince is lightly seasoned with tomato, salt, pepper and a touch of paprika, so it’s ready to use and perfect as the base for a wide range of mid-week recipe favourites, from pasta bakes and spag bol, to chilli and lasagne. Based on HECK’s popular sausages of the same name, the fava bean-based Vegan Italia Burgers are brilliant for the BBQ and are packed with tomato, basil, garlic and vegan cheese.…

a very pressing issue

Tofu is a vegan staple, but we all know that pressing the water out is a must if you want the best results from it. Most people press their tofu by stacking a lot of books and heavy items on top of it. A multitude of paper towels soak up the water and, if you are lucky, after several hours you have tofu that is ready to cook. But good tofu doesn’t have to mean long waits, water all over the kitchen, or a bin full of wasted paper towels. TofuBud presses are changing the game. The TofuBud press can drain all of the excess water out of your tofu in a fraction of the time with none of the mess and, more importantly, none of the waste. Disposables are something…

behind the scenes at viva!

Bird Flu Scientists have been warning us for years about the pandemic threat posed by factory farms and wildlife markets, and many fear that the next pandemic will be caused by a bird flu virus, making the jump to humans from poultry or pigs. Avian influenza (bird flu) viruses are among the most dangerous viruses that can affect humans, with a case fatality rate ranging from around 30-60 per cent. We’ve been here before; Ebola, HIV, SARS and MERS are all examples of zoonotic diseases that spread to humans from animals. These ‘spillover’ events can occur when humans invade wildlife habitats, at wet markets – where many different wild and domesticated animals are sold live and slaughtered – and in factory farms, where large numbers of animals are crammed into sheds. We’ve created a…
