Georgina Hayden Georgina Hayden is a food writer and stylist. Growing up above her grandparents’ Greek Cypriot taverna in Tufnell Park, she developed a love of cooking from the recipes passed down to her. As a teenager, she ran a stall at a farmers’ market. Her passion for food landed her work on food magazines, and then Jamie Oliver’s food team for 12 years. Georgina’s mouthwatering meals are inspired by her family, her heritage and her love of travel. She documents her food adventures on Instagram @georgie puddingnpie and@peaandthepod. Taverna is her second book. For a treat, try it grilled, served with garlic butter or lemon mayonnaise alongside a big pile of home-made chips! ✢ CLAMS Delicious, and a great source of zinc. Try them mashed on toast with a sprinkling of chilli flakes and a squeeze of lemon, or paired with prawn cocktail for a fresh dinner. ✢ BEETROOT Packed full of fibre, this versatile and colourful veg is great made into a variety of sides. clotted cream madeleines

Makes 18 • Ready in 30mins 2 eggs70g caster sugar45g unsalted butter, softened, plus extra for greasing45g clotted cream2tsp runny honey90g plain flour, plus extra for dusting½tsp baking powder strawberries, to serve you will need: a madeleine tin 1 Whisk the eggs and sugar together until expanded in volume. Beat in the butter, clotted cream and honey. 2 Sift in the flour and baking powder, and gently fold through. 3 Grease the madeleine tin well with butter and dust with flour. Spoon a little of the mixture in each. 4 Heat the oven to 180C/Gas Mark 4. Bake for 12mins. Remove, cool for a minute then tip out of the moulds onto a cooling rack. Serve with strawberries.
