Creamy pumpkin carbonara Dish up food blogger Kayla Sciacca’s modern twist on the Italian classic SERVES 4 In a bowl, whisk 1 cup pumpkin purée, 2 eggs, 3 egg yolks, ¼ cup cream, 1 cup grated parmesan, salt and pepper. Cook 500g spaghetti according to packet instructions. Reserve ½ cup of the pasta water before draining. Fry ½ cup sage leaves in olive oil over medium heat for 10 secs or until crispy. Remove from pan. Fry 100g diced pancetta for 4-5 mins over low-medium heat. Add 1 garlic clove, cook for another min, then discard it. Add spaghetti to pancetta oil and mix. BEEF, MUSHROOM & TOMATO POT PIES SERVES 4 PREP 15 MINS COOK 1 HOUR 35 MINS • 1kg chuck steak, diced• ½ cup seasoned flour• ¼ cup olive oil• 1 onion, diced• 2 garlic cloves, crushed• 3 tsp smoked paprika• 200g button mushrooms, sliced• 400g can diced tomatoes• 1 cup beef stock• 2 tbsp oregano leaves• 6 sheets filo pastry• 40g butter, melted 1 Preheat oven to 180°C. 2 Toss beef in flour to coat, shaking off excess. In a large flameproof casserole dish, heat oil on high. Brown beef in two batches, 3-4 mins each. Transfer to a plate. 3 Reduce heat to medium, then saute onion, garlic and paprika 2-3 mins.
