MANGO CREAM SHORTBREAD SANDWICH COOKIES MAKES ABOUT 8 LARGE OR 12 SMALL SANDWICH COOKIES HANDS-ON TIME 1 HOUR TOTAL TIME 4 HOURS Mango Cream 2 cups cubed fresh mango½ cup granulated sugar1 tbsp cornstarch4 large egg yolks1 ½ tsp grated lime zest2 tbsp lime juice¼ cup cold unsalted butter, cubed Shortbread Cookies 1 cup unsalted butter, softened¾ cup icing sugar½ tsp vanilla¼ tsp salt2 cups all-purpose flour Mango Cream In food processor or blender, purée mango. In heatproof bowl, whisk together sugar and cornstarch. Add mango purée, egg yolks, lime zest and juice; whisk to combine. Set bowl over saucepan of hot (not boiling) water; whisk mango mixture constantly until thick enough to coat back of spoon, 10 to 12 minutes. Remove from heat.
