Suddenly, it seems, we are all on the move again, and in this issue, as the promise of holiday and the privilege of travel loom large, we consider the idea of escape from our known worlds, and of voyage and adventure to brave new ones. Escape means different things to different people, of course. For me, it is two water views that provide me with my moments of greatest calm and contentment. One is a wide, wide panorama of the Aegean from a hilltop chapel on a tiny island in the Dodecanese, by preference as the sun sets in a Turner blaze of mauve, apricot and rose. The other is provided by a library overlooking the Strait of Gibraltar, seen from Tangier, where the Mediterranean roils into the Atlantic and Spain…

OF COURSE you cook and eat seasonally. Berries and tomatoes in summer, game and pumpkin over the autumn and winter, lamb and asparagus in spring. But fish! What about fish? Fish, at least most of it, caught wild, is absolutely seasonal. And that’s a wonderful thing because it stops you thinking, oh yeah, fish. Don’t let that happen. Don’t let it live in your head as this slightly amorphous food group that you cook less often because… what? It can be tricky and there are all those bones? It isn’t and there aren’t.
