Watermelon and rose sorbet This beautifully fragrant ice is really refreshing on a hot summer’s day. Serves 8 Prep time: 45 mins, plus chilling and freezing Cooking time: About 10 mins 225g granulated sugar900g watermelon flesh, chopped and deseeded, plus wedges to serve½tsp rose water Juice of 1 lemon1 egg white, lightly beaten1tbsp edible dried rose petals, optional 1 In a large saucepan, heat the sugar with 500ml water, stirring until sugar dissolves.
