We’re all familiar with butternut squash, but many different varieties are becoming more widely available. Here, we shine the spotlight on a particularly interesting type. What is it? Spaghetti squash is a yellow-skinned, oval-shaped squash. The British season is earlier than most, with the first appearance coming around late July to early August, but it’s harvested right through October. What does it taste like? Once cooked and scraped with a fork, the flesh of the squash falls away in spaghetti-like ribbons, hence the name. The taste is fairly neutral and ever-so-slightly sweet – it’s less earthy and milder in flavour than butternut squash, and much softer in texture. How should I cook it? For best results, cut the squash in half lengthways, remove the seeds, brush with oil and roast at 200C/180C fan/gas 6 for 30…
