BLACK CHERRY BRULEE Serves 4 Prep time: 5 minutes Cooking time: 20 minutes 200ml double cream 300g thick Greek yogurt (full fat, don’t scrimp on this) 215g can pitted black cherries, drained (reserve 2 tbsp juice/syrup) 1 tbsp creme de cassis, cherry brandy or kirsch liqueur 70g Demerara sugar 1. Whip the cream until it is just past the soft peaks stage (so it’s thick but not quite stiff). Fold it into the yogurt until it’s smooth and well-incorporated. 2.
