HOW IT WORKS The air fryer is renowned for replicating the crisp texture of deep-frying with a fraction of the oil used in traditional deep-frying methods. This amped-up countertop convection oven works by pushing hot air around food: The rapid circulation of air makes food crisp, much like deep-frying, but with a lot less oil. For example, air-fried chips have 4 to 6g of fat vs. 17g in the deep-fried version. There are many sizes of air fryers; for the recipes in this book, you’ll need a 5-6-qt. model. If you have a larger or smaller air fryer, increase or decrease food quantities accordingly. SAFETY Before starting any recipe, read the manufacturer’s instructions for your appliance.
