We are in the business of dreaming big. Each issue we conceive a magazine full of amazing journeys, but there are always limitations – we can’t fill every magazine with the whole world (especially if we want to sleep). The criteria for each entry did not require them to be monumental or famous; we found wonder in bookshops and neighbourhood bars (albeit ones voted the best bar in the world), as well as vast desert landscapes and exotic island paradises. All they needed to instil in us – and hopefully in you as well – was a sense of wonder at the…

eating out (and about)

VEGAN GOES GLOBAL It has taken a while but vegan cooking is finally getting its time in the spotlight, in no small part due to people like Ellie Bullen upping its glam factor. The dietician and nutritionist has a passion for plant-based eating, which she extols the virtues of via her website and hugely popular Instagram account. Now she has merged her love of food with the allure of travel to produce The Global Vegan (Plum, $34.99), a 300-page-plus cookbook and travel guide that combines ‘wish-I-was-there’ images of far-flung locations with plant-based recipes influenced by them. From Mexican molletes (a more exotic take on smashed avo on toast) to Singaporean laksa to mango sticky rice, the healthy, easy-to-follow recipes flit from country to country much like Ellie. And if you were…

torres del paine national park

There are some national parks that are in the essential-to-see-before-you-die category: Yosemite (USA), or Zhangjiajie National Forest Park (China), for example. And then, there’s Torres del Paine in Chile’s Patagonia region. Part of a vast wilderness area, it straddles the ice fields at the foot of the Andes and incorporates immense glaciers, clear turquoise lakes, expansive grasslands and forests, and a dramatic mountainscape so iconic, it probably already feels familiar to you from magazine pages such as these. The three famous, immense buttresses of rock, the park’s namesake Torres del Paine, are a pilgrimage for hikers the world over. Then there are the big cats, the largest flying animal on the planet and incredibly rare and unusual deer to be photographed. Dust off your boots and get packing! MUST-SEE SIGHTS Torres del Paine The…
