Amaranth nut bread 1½ cups amaranth flakes ½ cup sunflower seeds ½ cup pepitas ½ cup mixed nuts, crushed if large nuts are used 3 Tbsp psyllium husks 100g flaxseed meal 1 tsp sea salt 3 Tbsp macadamia oil 1 Tbsp raw honey (optional) 350ml filtered water 1 Place amaranth, seeds, nuts, psyllium, flaxseed and salt in a bowl and mix to combine. Stir oil, honey and water in a small saucepan on stove on low heat until honey is dissolved. Mix into dry ingredients. My typical day… My working week is so varied as I’m self-employed, but there are some regular features to each week. I teach yoga classes at Positive Balance on Auckland’s North Shore and I have my radio show on a Saturday at Radio Live. Outside of that the days are filled up with the kids and their routines.  Depression stole large chunks of my life. I was unable to work, leave the house or look after myself. Learning to manage my depression only started when I began to practise self-care.
