MAKES 1 LITRE
Fresh berries, such as red- or blackcurrants, raspberries, blackberries, strawberries or gooseberries can be used. Try adding a vanilla pod to the mixture, spices, such as cardamom or star anise, or herbs, such as mint or thyme.
1kg redcurrants, raspberries or berries of your choice, wiped clean and dried 1 vanilla pod, split lengthways 750ml unflavoured schnapps or vodka (40% alcohol content, 80 proof) Place the berries and vanilla pod in a 1-litre jar with a tight-fitting lid, then top with the alcohol. Cover and leave in a cool dark place (about 20°C/ 68°F) for at least a week, or until the berries have sunk to the bottom. At this point the schnapps can be served.
