From lollipops and licorice to jelly beans and jawbreakers, candy comes in lots of shapes, colours, and flavours. It’s a regular sight on store shelves, especially at this time of year. But before the 1800s, the main ingredient in candy, sugar from sugarcane plants, was very expensive. Only the richest families could afford to eat candy. Today, sugar is much cheaper to produce. Candy is so common that we can even get it free when we’re trick-or-treating!
IT’S ALL ABOUT THE MIXING
For the most part, candy is made by boiling water and stirring sugar into it. When the molecules of water are heated up, they move faster, causing them to bump into more of the sugar molecules. This helps mix all the molecules together, creating a sticky, syrupy solution.…
