Welcome to the July issue! It’s hard to believe that we’re in the second half of the year; time definitely seems to speed up the older I get. I remember the end of the school year when I was small – the summer holidays seemed to stretch out in front of me, six whole weeks of sunshine and friends and playing outside and going on holiday. Nowadays, six weeks pass in a flash! What I wouldn’t give for an uninterrupted summer with no responsibilities and plenty of time to do whatever I want! A spicy Korean paste made from gochu-garu (chilli powder), sticky rice, fermented soya bean powder and salt, gochujang is used to flavour, as a marinade, and as a condiment. It uses a scale called gochujang hot-taste unit (GHU) to measure the spicy heat, with five levels: mild, slight hot, medium hot, very hot and extreme hot. Gochujang is an ingredient of the Korean dish bibimbap; a bowl of rice topped with vegetables, gochujang, and traditionally including beef and a fried egg. Bacteria and Breastfeeding What is a microbiome? It is likely that you have heard that humans have a much greater number of bacterial cells than human cells. Our gut, mainly the large intestine, contains a wide variety of bacteria, some known through research to be beneficial to health (sometimes called ‘probiotics’) and others unhelpful or harmful. The launch came after the pizza takeaway brand revealed that a poll it carried out showed that two thirds of Brits are bored of their current ready-toeat lunch offering. A burger by award-winning plant-based food producer Future Farm (futurefarm.io) has been certified the world’s first carbon neutral meatless burger. It has received the certification from third-party carbon verification service CarbonCloud, measured by taking into account the sourcing, packaging, manufacturing and shipping at every point of the product’s journey, from ingredient suppliers through to disposal in customers’ homes. For each Future Burger purchased worldwide, Future Farm will offset 100 per cent of the carbon emissions via CarbonPartner. It’s estimated that over 1400 tonnes of carbon will be offset in 2022 as a result – the equivalent of over 4.5 million kilometres driven by cars. A report by charity No Meat May (nomeatmay.org) has predicted that half of the UK will be vegetarian or vegan in less than 20 years as the impacts of climate change increase. Food futurologist Dr. Morgaine Gaye, who looks at food and eating from a social, cultural, economic, trend, branding and geo-political perspective, believes that Generation Z will be ashamed to buy meat in public. “With much more social acceptance normalising meals without meat, plus the extensive availability for alternatives, it follows that we can expect to see continued changes in the way consumers shop and eat,” said Dr. Gaye. UK supermarket giant Marks & Spencer (marksandspencer.co.uk) has confirmed that its Percy Pig sweets are now veganfriendly. The move follows a recipe change in recent years that saw gelatine removed from the ingredients, but left beeswax in the sweets, leaving vegans left disappointed. But this ingredient has now been removed, meaning vegans can finally enjoy the popular sweet. Marks & Spencer confirmed in 2021 that it sells 16 million packets every year – working out to 400 million individual sweets: a whopping 10 sweets every second.
