Although I’m writing this letter, regular readers spotted I was missing last month as I had to take time away for personal reasons (thanks for your many messages of support). Sticky buffalo wings with blue cheese sauce Serves 4 (with extra sauce!) Hands-on time 25 min, plus marinating Grill time 25-30 min You’ll also need Barbecue or 2 large baking trays lined with compostable baking paper MAKE AHEAD Make both sauces up to 1 day ahead. Cool, then cover and chill. Gently reheat the blue cheese sauce, adding a splash of milk if needed, and whisk until smooth and silky. DON’T WANT TO BBQ? To cook in the oven, spread the wings in a single layer on the baking trays, toss with 2 tbsp olive oil, then cook for 20 minutes at 180ºC fan/gas 6.
