Add 2 tbsp condensed milk and whizz again, scraping down the sides several times, until thick and smooth. Quickly sandwich your instant ice cream between 2 squidgy cookies (we made white chocolate ones – see above right). Of course spectacular food can be found, as he puts it, on Styrofoam plates in Singapore’s hawker centres, but it’s not just about the food. Restaurants are about theatre. We eat with our eyes. The diner’s experience is lifted by great surroundings and presentation – and that doesn’t necessarily mean massive cost. I visited a Michelin-starred restaurant in Chicago where the head chef would invite children from the city’s schools to come and share the restaurant experience.
