BAKED PASTA WITH CHICKEN, TOMATOES AND ZUCCHINI MAKES 4 SERVINGS INGREDIENTS 5 oz dry pasta2 tbsp olive oil1 large onion, diced1 large zucchini, diced12 oz cooked chicken breast, cut into 1-inch pieces1 tsp Italian seasoning1 (14.5 oz) can fire-roasted tomatoes2 cups fresh spinach½ cup shredded reduced-fat mozzarella cheese DIRECTIONS Preheat oven to 375 F. Cook pasta as per package directions. Drain and set aside. Heat oil in a large skillet over medium-high. Add onions and saute until soft and slightly translucent, about 2 minutes.
