You may already have cooked with pomegranate molasses (if not, turn to page 84 for Diana Henry’s recipes), but the latest sticky sweet cooking ingredient is date molasses. What is it? A dark, thick and sticky syrup made from the juice of pressed dates. What does it taste like? Incredibly sweet and treacly, like a dark caramel. What can I do with it? Its intense sweetness and syrupy texture means it lends itself well to use in sweet dishes – drizzle it over pancakes or into porridge, swirl through yogurt or use as a sweetener in smoothies, desserts, cakes and bakes.
