A recent reader survey revealed some rather surprising stuff about you guys. I knew you were active, but what our research showed was that you’re not exactly wishy-washy when it comes to fitness – a whopping three-quarters of you are training at least four times a week (!) and you’re into strength training, group training and high-intensity interval training. Q/ How can I save a dish when I oversalt? A/ So long as the lid on the salt shaker hasn’t fallen off and a sizable quantity poured in (in which case, it’s best to start over), most liquid-based dishes (think soups and stews) can be salvaged by adding water. Start with a tablespoon at a time and taste as you go, as you will need to increase the other ingredients in the recipe to maintain the flavor (for example, more fresh herbs or tomato purée). If you’ve oversalted solid ingredients (such as a pot of grains, beans or a veggie side), try mixing a second, plain version into the first. Adding a dollop of yogurt or sour cream can also bring balance. Cream, milk or unsalted butter are quick fixes…

TIPS & TRICKS Brown guac doesn’t quite have that same allure as the glowing green kind. Prevent oxidation by wrapping leftovers well with plastic wrap or squeezing lemon juice over any exposed fruit. The old wives’ tale that leaving in the pit prevents decay is just that. Only limiting air exposure or adding ascorbic acid (from lemon juice) truly does the trick. A gentle squeeze is often information enough to reveal ripeness; perfectly ready fruit should feel soft but not squishy. Hass avocados darken as they ripen, going from jade to purple and ultimately to black when decayed. Need to ripen your fruit in a hurry? Stick avocados in a paper bag with a ripe banana or apple.
