2kg of oxtail
3 onions, finely chopped
2 tbs of oil
1 green pepper, finely chopped
1 red pepper, finely chopped
8 garlic cloves, chopped
1 Bay leaf
3 all spice ( pimento)
1 tbs of crushed chillies
Salt and pepper to taste
1 carrot, peeled and chopped
1 cup of Worcerstershire sauce
2 tbs of mustard
1/4 cup of apricot chutney
In a large heated pot, add the oil and brown the oxtail meat well, remove from pot.
Next, add the onions, carrots, peppers, garlic, whole spices and crushed chillies into the same pot oxtail was browned in. Fry for 15 minutes.
Add the oxtail and salt and pepper, enough hot water to cover the meat and cook for 4 to 5 hours on medium heat stirring…
