I recently tried the chilli-butter roasted kingklip (far right) with mash recipe (T155, November 2019) and it was absolutely amazing. The ingredients for this recipe are super-easy to source, all the spices are common in the everyday kitchen and one does not require any special techniques to master it. I added baby leeks to the butter-and-garlic mix, which I roasted with the kingklip. I also added lemon zest to the kingklip and fresh thyme to the mash. I was surprised by the new Woolworths frozen mashed potato, it tastes great and is extremely quick and easy to prepare. I’ve always wanted a quick and easy kingklip recipe that’s of restaurant quality and thanks to Woolworths and TASTE magazine, I have found what I was looking for! – Stefan Wilding STEFAN WINS…
