Devilish Turkey Breast

Bone-in turkey breast (7 lbs.)1 (12 oz.) bottle sweet-and-sour sauce2 Tbs. hot sauce1 eggplant3 spicy red peppers1 black olive, pitted and sliced1 shallot, peeled and halved
Step one: Glaze turkey
Heat oven to 350°F. Place turkey breast on rack set in roasting pan. Season generously with salt and pepper. In bowl, whisk together sweet-and-sour sauce and hot sauce. Roast turkey 2½ hrs., or until thermometer inserted in turkey breast, not touching bone, reads 175°F. After 1 hr., brush turkey with half the sauce mixture. Transfer turkey from roasting pan to serving platter; brush with remaining glaze.
